Courgette and Spinach Patties

These are a tasty and very easy way to get a lot of greens, but in a slightly interesting way. And we all know how import our greens are!

This is just the basic recipe, so add whatever you like to make them your own. Play around with different ingredients like grated carrots, spices, garlic or by just adding more eggs if you want more protein and a thicker consistency.


  • 100-150g finely chopped spinach

  • 3 small grated courgettes

  • 2 eggs scrambled

  • Fresh herbs like parsley or chives

  • A small pinch of salt


  • Mix all the ingredients together and cook in a pan with a dollop of coconut oil at a medium to low-ish temperature for about 2-3 minutes on each side or until golden brown. They shouldn’t be soggy or over cooked.
  • Optional: I add 3-4 tbsp of nutritional yeast flakes, but that’s purely due to the fact that it provides all 18 amino acids, extra protein, fiber, minerals and some vitamins. It also adds a hint of cheese flavour.
