This Norwegian inspired dish comes from lovely summer days there having fresh berries and pancakes. Protein power makes a great alternative to flour and berries are fairly low on carbs.
A great meal before gym!
1 mashed banana
1 scoop protein powder
1 egg whisked
A splash of unsweetened oat milk
A dash of mixed seeds and chopped nuts – use anything you have. I enjoy shredded coconut and flaxseeds too! Around 50ml or to your preference.
Berries and yogurt with a splash of honey or rice syrup for on top.
- Whisk all the ingredients together in one bowl.
- Pour into a heated up pan with a bit of coconut oil and cook evenly on each side for a few minutes.
- Add some summer berries and serve with a dollop of yogurt! 😋
