Paleo Protein Pancakes

This Norwegian inspired dish comes from lovely summer days there having fresh berries and pancakes. Protein power makes a great alternative to flour and berries are fairly low on carbs.

A great meal before gym!

Ingredients

  • 1 mashed banana

  • 1 scoop protein powder

  • 1 egg whisked

  • A splash of unsweetened oat milk

  • A dash of mixed seeds and chopped nuts – use anything you have. I enjoy shredded coconut and flaxseeds too! Around 50ml or to your preference.

  • Berries and yogurt with a splash of honey or rice syrup for on top.

Directions

  • Whisk all the ingredients together in one bowl.
  • Pour into a heated up pan with a bit of coconut oil and cook evenly on each side for a few minutes.
  • Add some summer berries and serve with a dollop of yogurt! 😋
