Asparagus & bacon air fryer dippers

Cook time; 15 mins
Ingredients:
10 asparagus spears, woody ends removed (see tip)
10 rashers streaky bacon
2 free range eggs
Method:
Lay the asparagus on a board and wrap each one with a strip of bacon, leaving the frilly tops exposed. Place into your air fryer basket and cook for 10-12 mins at 200c.
Meanwhile, boil the eggs to your liking.
Serve the asparagus spears as dippers for your boiled eggs.
A little bit extra
Although this recipe can be enjoyed at any time of year, such as right now! Asparagus season is quite short in the UK so it's best to make the most of freshly harvested batches between April and June. It's packed full of goodness and really versatile; try steaming and serving on the side of your favourite fish, or stirring into risottos and pastas.
To prep, hold the spears horizontally and break off the end where you see a bend, it will naturally snap off at the woodiest part. Don't discard these! You can finely chop and add to things like sauces bases and soups.
Serve this simple brunch dish with whatever you like - toasted sourdough, grilled sausages or with some hollandaise sauce.
