Courgette fritter patties are a tasty and very easy way to get a lot of greens, but in a slightly interesting way. And we all know how import our greens are!
This is just the basic recipe, so add whatever you like to make them your own. Play around with different ingredients like grated carrots, spices, garlic or by just adding more eggs if you want more protein and a thicker consistency.
Ingredients
- 1 courgette
- 2 eggs
- 1 tbsp oil
- 50ml milk and 50g flour (optional for a batter consistency)
- Spices and chopped herbs (optional)
- Garlic (optional)
- Add your favourite ingredients to mix up the outcome
Method
- Whisk eggs and combine milk and flour slowly if you are creating a batter mixture. I have just gone for eggs for a lighter option.
- Grate the courgettes, chop herbs and stir in to egg mixture with any of your chosen spices
- Heat oil in a pan and add two table spoons of mixture to create one patty
- Fry for 2-3 minutes on each side or until crispy
- Enjoy!
Serve on their own with your choice of sauce, have with breakfast or as a tasty side for dinner!
