Perfect for prepping as well as using up your favourite nuts and seeds.
Makes 6 portions
Prep time; 5 mins
Cook time; 20 mins
Ingredients:
2tbsp olive oil
1tbsp light brown sugar
1tsp smoky paprika
½ tsp dried oregano
Pinch of chilli flakes (optional)
1tsp flaky sea salt
250g mixed nuts – we used
50g mixed seeds, like sunflower, pumpkin etc
50g mixed dried fruit, like raisins, cranberries etc
Method:
Preheat the oven to 180/160 fan/gas 4 and line a baking sheet. In a small bowl, combine the oil, sugar, spices and salt. In a large bowl, toss together the nuts and seeds and pour in the spice paste, tossing well until combined.
Spread out on the baking sheet and roast for 15-20 mins until smelling nutty and toasted. Allow to cool slightly before transferring back into the large bowl along with the dried fruit and tossing to combine. Cool completely before storing in an airtight jar.
A little bit extra:
This recipe is so easy to personalise; adding things like cumin or cayenne will provide a warmer flavour, whilst things like thyme or rosemary will give you more savoury notes.
As well as switching up the flavours, you can use any nuts or seeds you might have to hand. It’s the perfect way to use up any half opened packets you have lurking in the cupboards.
Nuts are a great source of healthy fats and protein, so this is a perfect recipe to meal prep for your snacks!
This super easy recipe is a great one to have on hand for entertaining – the perfect alternative (or accompaniment!) to a bowl of crisps.
