This is a super quick and easy recipe for making a slow cooked leftover roast chicken soup – no waste and no fuss!
Slow cooking means that you can be super creative with leftovers and also have yummy sustainable meals because nothing is being wasted! Now more than ever, we are reflecting on our food waste and how we can be more sustainable with what we consume. In the UK alone, 6.5 million tonnes of food waste is thrown by households - 4.5 million of which is completely fine to eat! Not only does reducing food waste mean it saves individual households money but it is also critical in protecting the planet! I am all for sustainable living and I really want to incorporate into my recipes how we can save food and turn stuff into yummy dishes, when we think it should be thrown!
Ingredients
- Leftover chicken & bones
- bones
- Chicken fat
- Leaks
- Garlic
- Carrots
- Celery
- Barley
- Potatoes
- Stock (Chicken)
- Water
Directions:
- Remove the chicken from the bones and add to the pot. Then add chicken fat, leaks, garlic, carrots, celery, barley, potatoes, chicken stock and water. Add the chicken bones at the end.
- Put the lid on and bring to boil. Then transfer to slow cooker.
- Cook for 8 hours
- Remove bones and large veg from soup.
- Enjoy the cooked leftover roast chicken goodness that is this soup!
