Make the most of seasonal spring greens with this midweek staple meal that’s perfect to prep ahead.

Ingredients:
1 nest of dried egg noodles
200g spring greens
1tsp garlic and ginger paste
2tbsp light soy
1tbsp sesame oil
1tbsp rice wine vinegar
1tsp chilli oil
Juice of 1 lime
1tbsp vegetable oil
1 red onion, thinly sliced
1 yellow pepper, deseeded & thinly sliced
2 carrots, peeled into ribbons
Fresh coriander, roughly chopped
Method:
Put the noodles into a small saucepan and cover with boiling water. Put on a medium heat and cook whilst you prep the rest of the dish.
Prep your spring greens by washing well then removing any of the tough stalks. Roll up then slice into ribbons with a sharp knife. Set aside on kitchen paper to dry.
In a small bowl, stir together the garlic and ginger paste, soy, sesame oil, vinegar, chilli oil and lime juice.
Meanwhile, heat the oil in a large frying pan or wok and add the onion and pepper. Cook for 2 mins before adding the spring greens and carrot and cooking for another 2 mins.
Drina the noodles, then stir into the veg along with the sauce and cook for 1 min, stirring to combine.
Serve sprinkled with the coriander and a little extra chilli oil, if you like.
A Little Bit extra:
Build up your stir fry; use whatever veggies you have in the fridge – things like pak choi, mushrooms and beansprouts make delicious additions.
Eat the seasons; spring greens are so versatile – shred them up into salads or add last minute into a creamy pasta dish. They’re super easy to grow too if you fancy yourself as a gardener!
Prep ahead; slice up your veggies when you have a spare 5 mins and keep them covered in the fridge. Same goes for the sauce, stir together and set aside until you’re ready to cook. Carrot noodles; only using 1 nest of egg noodles here may seem small, but the carrot ribbons really pad them out.
Watch your wok; a well-seasoned wok is perfect for stir frying. If you don’t have one, a non-stick frying pan will work just as well.
Vegans rejoice; this dish is naturally vegan but you can of course add your choice of protein–king prawns, pork or chicken work well in a stir fry.
