5 ingredient kale & sweet potato baked eggs
Baked sweet potatoes are a great base for this hearty meal – perfect for lunch or dinner! Serves; 2 Prep time; 5 mins Cook time; 1 hour 20 mins Ingredients: 1 large sweet potato 2 free range eggs ½ 160g bag sliced curly kale 1 red chilli, deseeded and finely sliced 2tbsp 0% Greek style natural yoghurt Method: Preheat the oven to 200/fan 180/Gas 6, and rub the sweet potatoes all over with 1tbsp olive oil, and seasoning. Bake in the oven for 1 hour, or until tender. Remove from the oven and allow to cool slightly. Scoop out most of the flesh and set aside in a bowl. Heat 1/2tbsp olive oil in a non-stick frying pan, and cook the kale with the chilli and seasoning for 2-3 mins until wilted. Combine half with the sweet potato flesh. Spoon the sweet potato flesh back inside the shells, making a little hollow in the middle of each. Crack an egg into each, then season and bake again in the oven for 12-15 mins, or until the egg is cooked to your liking. Serve with the remaining kale on the side, as well as a drizzle of yoghurt, and plenty black pepper. A Little Bit Extra: This fresh and tasty dish is only 5 ingredients! The only other things you need are seasoning and olive oil from your cupboard. Switch up the kale here for spring greens or shredded cabbage.
