Tropical Granola
Use the contents of your baking cupboard to its greatest potential with this super simple breakfast treat. Yes, there’s sugar, but the majority of the flavour and sweetness comes from your favourite dried fruits.

Ingredients
- 200g rolled oats
- 50g mixed seeds
- 50g chopped pecans
- 50g chopped hazelnuts
- 1tsp ground ginger
- 150g dried apricots
- 100g coconut oil
- 2tbsp soft light brown sugar
- 4tbsp maple syrup
- 3tbsp squeezy peanut butter
Method
Preheat the oven to 200/180 fan/gas 6. In a large bowl, combine the oats, seeds, nuts, ginger and dried fruit. Meanwhile, melt the coconut oil over a medium low heat in a small saucepan before stirring in the sugar, syrup and peanut butter.
Pour the wet ingredients into the dry and mix well with a wooden spoon until combined. Tip onto a lined baking tray (you might need two) and spread the mix evenly, pressing down with the back of a spoon. Bake for 18-20 mins until golden brown.
Allow to cool overnight uncovered. Store in a clean airtight jar and serve with dairy free yoghurt and fresh fruit.

This recipe is completely versatile – switch up the nuts, seeds and dried fruit for whatever you have in the cupboard.
Rolled oats will give a crunchier texture, but normal porridge oats will work well, too.
This is perfect for batch cooking! Make a big batch and your breakfast is sorted for the week ahead. You could even combine with yoghurt and milk before storing in the fridge for an overnight oats vibe.
